If you am giving a free sensory ticket to Germany and I am making you
Semmelknödel.,
This is not a cooking blog but if you know me I can go in random directions.
My wife bought too much bread at Costco and I can not eat that mush crusty bread. it’s physically impossible. So I decided to make a German dish I bring out occasionally.
Semmelknödel are bread dumplings made with dry white bread rolls (typically Kaiser (aka Austrian rolls). While they are popular in both Austria and Germany, their name derives from the Bavarian word Semmeln which means bread rolls (Brötchen in the rest of Germany). The word knödelsignifies something kneaded.
This is how I made it tonight.
Knüdel
Take left over bread (mine was a crusty gigantic baguette) and cut into manageable chucks. I heated up some vegan milk, vegetable broth, and poured it over the bread.
Meanwhile I sautéed, in a little vegan butter. diced carrots, mushrooms, onion in a spicy, vegetable broth and added to the other dish. My ex mother in law is in the after life ‘Mark, was machst du da?’
Knead it with your handsand it will turn doughy. And then form tints giant meatballs.
Most people boil the dumplings. Me I bake them in the oven,
I topped the dumplings with a simple vegan mushroom gravy. be sure to use a little flour to thicken your gravy.

Note: I am terrible at writing recipes. My son and I share recipes that are just vague enough, that the cook has room to wing it on their own.

I would love to hear you opinion as well
