What’s your recipe for healthy eating?

I rarely follow recipes, except for when my wife is in the room. My answer is usually. “Yes kind of.“

We have tried to cut out as much processed food as possible leaning on fruits and vegetables. Naturally remaining Vegan. My go to recipes were Mac And Cheese, Pad Thai, Curries, Pho and mainly noodle based dishes. We have eliminated many of the pastas as they are empty calories.

Some simple staples

Steel Cut Oats – tasty, versatile and nutritious either savory or sweet. Also know as The Golden Spurtle

Garbanzo Beans – this was our son’s favorite food and now I have come to treasure them.

Tomatoes I could write an entire essay on my various uses and misuse of Tomatoes

Nutritional Yeast – The vegan wonder for that cheesy touch.

Lasts nights meal was pretty typical.

Vietnamese Rice Noodle Bowl -simply top rice noodles with spiced tofu, various veggies and a sauce of your choice. Preparation time was fifteen minutes.

Our menu for this week is Lentil Sloppy Joes, Spaghetti Squash “Pasta”, Tofu scramble and a bake potato bar.
