When I first started taking German classes I did not know what a Doner Kabab was. I had my first in I believe it was Berlin on a street corner. They are simple and delicious.
I winged this recipe, however this was the foundation.

Ingredients
- 280g smoked tofu, sliced into thin strips
- 2 ½ cups water (for boiling)
- 1 ½ tbsp soy sauce
- 1 ½ tsp apple cider vinegar
- 1 ½ tbsp neutral oil (for frying)
Spice Mix: - 1 ¼ tsp ground cumim
- 1 ¼ tsp smoked paprika
- ¾ tsp ground coriander
- ¾ tsp garlic powder
- ¾ tsp onion powder
- ¾ tsp black pepper
- ¾ tsp dried oregano
- ¼ tsp cinnamon
- ¼ tsp cayenne
- Salt to taste
Garlic sauce: - 2 garlic cloves, minced
- 1/2 cup vg mayo
- 2 tbsp vg greek yogurt
- 2 tsp lemon juice
- 1 tbsp EVOO
- 1/2 tsp za’atar
- Pinch dried oregano
To Serve: - Pita
- Fresh veggies (lettuce, tomato, red cabbage, cucumber)
Method:
- Add the sliced tofu to a pot with water, soy sauce, and apple cider vinegar. Boil for 5 minutes, then drain and pat dry.
- Mix all the spices. Sprinkle half over the tofu with oil and toss to coat. Leave for 10 minutes.
- Heat oil in a pan over medium-high heat. Add tofu strips and fry for 6-8 minutes until crispy.
- Sprinkle the rest of the spice mix over the tofu, stir for 30 seconds, then remove from heat.
- Load into warm pita with fresh veggies and garlic sauce. Then enjoy!
