When I first started taking German classes I did not know what a Doner Kabab was. I had my first in I believe it was Berlin on a street corner. They are simple and delicious.

I winged this recipe, however this was the foundation.

Ingredients

  • 280g smoked tofu, sliced into thin strips
  • 2 ½ cups water (for boiling)
  • 1 ½ tbsp soy sauce
  • 1 ½ tsp apple cider vinegar
  • 1 ½ tbsp neutral oil (for frying)
    Spice Mix:
  • 1 ¼ tsp ground cumim
  • 1 ¼ tsp smoked paprika
  • ¾ tsp ground coriander
  • ¾ tsp garlic powder
  • ¾ tsp onion powder
  • ¾ tsp black pepper
  • ¾ tsp dried oregano
  • ¼ tsp cinnamon
  • ¼ tsp cayenne
  • Salt to taste
    Garlic sauce:
  • 2 garlic cloves, minced
  • 1/2 cup vg mayo
  • 2 tbsp vg greek yogurt
  • 2 tsp lemon juice
  • 1 tbsp EVOO
  • 1/2 tsp za’atar
  • Pinch dried oregano
    To Serve:
  • Pita
  • Fresh veggies (lettuce, tomato, red cabbage, cucumber)
    Method:
  1. Add the sliced tofu to a pot with water, soy sauce, and apple cider vinegar. Boil for 5 minutes, then drain and pat dry.
  2. Mix all the spices. Sprinkle half over the tofu with oil and toss to coat. Leave for 10 minutes.
  3. Heat oil in a pan over medium-high heat. Add tofu strips and fry for 6-8 minutes until crispy.
  4. Sprinkle the rest of the spice mix over the tofu, stir for 30 seconds, then remove from heat.
  5. Load into warm pita with fresh veggies and garlic sauce. Then enjoy!

    It was so darn easy. We just made a batch of Seitan which was the tough part. I am very good at ad hoc cooking.
